TENTH VINTAGE RELEASE

2006 Cabernet Sauvignon “Stone Place

Estate Old Vines Organically Grown

Vintage Notes: The 2006 growing season began with extreme rainfall upon the arrival of the New Year. A very cool spring delayed bud break well into May however June allowed the vines to develop and offer a beautiful cluster set.  A longer than normal heat spike in July was followed by a cooler August which provided the grapes extended hang time and hence allowing slow but steady flavor development and ripening.

Winemaking: Cold soak must and post fermentation maceration techniques were applied to various lots of estate Cabernet Sauvignon. Barrel aged for twenty months in seventy five percent new French oak. Minimal rackings, no fining nor filtration. Bottled aged for one year pre-release.

Winemaker’s notes: Dark and dense in the rim of the glass. Aromas of black cherries, black berries, chocolate, brown spices, truffle and earth. The palate continues to evolve to incorporate cola, tobacco, leather and baking chocolate covered espresso beans. Flavors of just ripe blackberry with a heavy dose of boysenberry, cinnamon, clove and French vanilla start to intermingle. Silky and dense tannins and oak structure extend the rich Cabernet mouthfeel. Approachable and ageworthy.

Night Harvest at the Crocker Estate

It’s been exciting here at C&S!

The first wave of Sauvignon Blanc has just barely finished its barrel fermentation and the final block of Sauvignon is looking great and should be ready within the next 7 days. The SB harvest was quite modest and though we would love to have a few more clusters, the flavors are exquisite. The whole Crocker & Starr team was sorting and making sure that this crush went as smooth as all the others before it. We were sticky for a while but it was fun!

The Malbec, Merlot 314 and the Goddess Franc are prepped and ready for picking. The crews start their night harvesting between 3 and 4am. It might seem early but it’s the best time to pick the grapes since the concentration is at its peak.

We have asked Pam about our Cabernet Sauvignon and it looks like the blocks will be picked as they mature. The target date for the old vines Cab block is October 10th, weather pending. Speaking of weather, holy cow! It could not have been hotter this past Saturday and Sunday with temperatures over 104F. The duration of the peak was longer than all heat spikes all summer long. The day following the hottest, was absolutely chilly with temperatures in the low 50’s and barely warming to the high 70’s with clear skies. The cool weather persists buying us lovely hang time. Looking for multiple early morning harvests over an extended period of time.

We want to take time and thank you for visiting our web pages.  It has been a long and exciting road to get to where we are now but we are very proud of our new site and would love to hear some feedback from you.
Here is an update of what we have been up to:
Crocker & Starr has been busy with bottling.  The 2007 Cab Franc went from tank to barrel on Friday, May 21st and it is a wine we are proud to add to our lineup of stellar Cab Francs.  Rich, lush and delicious!  These wines will be released in the fall.
Armen has been traveling the Midwest and South meeting with our distributors and shaking hands with our customers. Up next is Ohio, Kentucky, Louisiana…
